Caribou live in the Arctic Tundra, Mountain Tundra and Northern Forests of North America Russia and Scandinavia. Herds migrate long distances to forage on leaves of willows, sedges, flowering tundra plants and mushrooms. Winter diets consist of grass like plants and small shrubs and reindeer moss (lichens). There are approximately 950,000 wild caribou in Alaska. The meat is of a finely grained texture and is slightly sweeter that venison. There is very little marbling in the meat which requires rapid or moist cooking techniques.
