NILGAI ANTELOPE

Nilgai antelope are native of India and Pakistan but now free range in Central and Southern Texas.  The flavor is milder than beef with a delicate texture much like veal.  Be careful not to overcook Nilgai or the meat will become chewy due to the low fat content which is about one third to one half that of beef.
